SARDINIA CULINARY TRADITION

Sardinia is a land rich not only in terms of landscape, culture and history, but also at the culinary level. The Sardinian cuisine is in fact an art that has been handed down for generations and which brings to life, through tastes and flavors, the culture and traditions of this people that has seen the presence of multiple contaminations and influences.
In this post we propose some of the typical dishes of this wonderful island:

SARDINIAN FREGOLA WITH SEAFOOD
Fregola is a typical Sardinian pasta made with semolina and in the shape of small balls. It is cooked in various ways, but the most classic is with seafood: clams, shrimp, mussels.

PORCEDDU
It is one of the most famous dishes of Sardinia. This is a pig raised only on this island and cooked on a low flame in a bed of myrtle leaves.

GALLURA SOUP
This dish is typical of Gallura, the north area of Sardinia between Badesi and San Teodoro.
It is also called "Zuppa cuata", but in reality it is not a soup, but consist in bread topped with cheese and sheep's broth and cooked in the oven.

CULURGIONES
Culurgiones are a typical dish of the Ogliastra area, on the east coast of the island.
They are very similar to homemade ravioli filled with potato cream, mint and pecorino. They can be served with tomato and basil sauce or with butter and sage.

OCTOPUS SALAD
It is a dish that is usually served as an appetizer and the main ingredient is octopus. The octopus is boiled and served with potatoes, celery and seasoned with oil, lemon, garlic and parsley.

BOTTARGA
The bottarga is a typical product of Sardinia that has become famous all over the world.
These are mullet eggs that are dried.
This delicacy can be enjoyed as a starter cut into thin slices, or is used to dress pasta.

SEADAS
It is a traditional Sardinian dessert that is made by hand with pasta prepared with semolina and lard, and is then filled with cheese. Everything is fried and served hot with honey or sugar.
