You’ll leave Florence on a private minivan to reach Volterra: the legendary city of the Etruscans and of snow-white alabaster.
Following a stroll through the alleys, the city square and the medieval palaces, this day trip will have you visit the inside of an olive oil mill. Here, the production of green gold follows a thousand-year old tradition that still calls for manual harvesting of the olives. You’ll be olive oil sommeliers for a day, discovering the growing methods employed in the olive tree groves, the special properties of the local soil and the many steps it takes to produce olive oil: from the grinding, to the bottling of the oil.
The lunch included at the end of the tour will be a full-body experience of what you’ve learned during the morning lesson. On your way back, you’ll stop at the Balze, where the vertical rock cliffs, caused by the collapse of an ancient stone mass, allow a beautiful view over the surrounding hillside.
